Today’s episode of Mum-to-Mum Monday is all about managing to eat nutritious food in spite of being rushed off your feet.

Now, I’ll be honest with you, but whenever I hear anything about healthy eating, my eyes start to glaze over. I’m not sure why, because I’m a complete foodie. I love to cook, I love healthy natural ingredients, heck, I even like grocery shopping.

But that whole healthy eating monologue I find, well…. kinda dull.

That was, until I met Mandie Spooner. Mandie is a Nutritional Therapist, living in the beautiful Northern Beaches of Sydney, Australia. Mandie brings a special sparkle to eating great food, and she doesn’t even mention quinoa, or chickpeas.

You’ll love this show because Mandie teaches us about how we can incorporate more broccoli into our busy life in a fun and informative way.

    Pre chopped veggies stored in the fridge so they are to hand? Genius idea, thank you, why did I never think of this before?!

    I LOVE the tip about leaving cut veg in the fridge. Why did that never occur to me?!
    Any tips for getting the kids to eat more veg? I generally give it to them before the meal in the hope that they will eat it when they are hungry x

      I do it every week Elaine! Did you check the weblink out at the end of the podcast for vegetable storing?

      That’s a tricky one, I do a lot of hiding veg in Spag Bol etc

      I have one really good eater and veg isn’t an issue, he won’t eat all veg and I don’t force the issue, we just introduce veg slowly and consistently eat it and have it in the house. My other boy is such a fussy eater, he likes to do everything in his own time so he’s a real slow burn, I make sure he gets nutrients from other foods and have faith that one day he will be a veggie lover!

      I always religiously cut carrot and cucumber sticks for everyones lunch boxes. Then the lightbulb went on. Maybe I should do some extra for myself! Works like a dream because now I eat them every day.

      Re kids and veg. Am I allowed to say BRIBERY??? No veg, no sweet treat, no excuses. I started off with a pea and a carrot and gradually piled more on (they haven’t realised yet). It took an age to work, but now they just get on with it.

    What’s your biggest struggle with eating healthy food? Has that changed since you’ve had children?

    The biggest thing that’s changed with my eating habits since I’ve had kids is the simplicity of meals. I’m looking forward to having more time to get creative and elaborate in the kitchen again. But for now, it’s quick, simple and basic all the way.
